Who likes cake mix? No one. Cake mix sucks. It's boring. And spongy and dry.
Of course, yeah, you can modify the recipe and stuff....
But it boils down to the same thing: You make a cake. It can be square, it can be round or rolled up. It's still a cake :D
I wanted to experiment in making cookies with cake mix.
So I made these cookie sandwiches, from the recipe I found on the website "The Joy of Comfort Food"
Recipe:
- 1 box cake mix
- 1/2 cup shortening (or butter)
- 1 egg
Protocol:
1- Mix
2- Roll into balls and flatten on a cookie sheet.
3- Pop in the oven (350 degrees) until ready.
4- Let cool
5- Assemble
Now for the assembly;
I decided to use up a pack of Cream Cheese I had in my fridge. To add taste, I added 2-3 tablespoons of Raspberry Jam.
No sugar, there is enough sugar in the jam :)
Then all you need to do is find two cookies of roughly the same size:
Aaaaaaand finished :D
Here is a bonus artsy shot of the food. Cause obviously I'm such a fantastic photographer (NOT!).
