My dad's bday calls for a delicious cake.
But none of those colourful and insane cakes.

Lemon poppy seed is a versatile moist cake that is great for tea/coffee.
I found a recipe online and *tic tic* 1 hours later TADAAAAaaaaa

The cake is moist, you can taste the lemon and the poppy seeds are crunchy. It's great :)

Ingredients:
  • 1cup butter, softened
  • 2cups brown sugar
  • 4 eggs
  • 2.5 cups all-purpose flour
  • 6tbsp poppy seeds
  • 2 tbsp grated lemon zest
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup 1% milk

1- Fluff the butter with the sugar. Incorporate an egg at the time.
2- Grate the lemon peel finely
3- In another bowl mix the flour, the poppy seeds, the lemon, the baking powder and the salt.
4- Incorporate the dry mix into the egg mixture, alternating with the milk.

5- Pour into molds and cook at 350 degrees until ready (when you insert a toothpick in the center and it comes out clean)

So while the cake is cooking, you should definitely make the syrup, that will go on top of the cake. It will add lemon and moisture to the cake.
Here is how:

1- Mix 1 cup of sugar, 1 cup of lemon juice and 3 tbsp of grated lemon peel in a pan.
2- Cook until sugar is disolved.
3- When cakes are ready, pierce the cake periodically with a fork and pour the syrup on top.

Recipe yield: 3 cakes
